BEETROOT + GOAT CHEESE SALAD

BEETROOT + GOAT CHEESE SALAD
INGREDIENTS
6 medium beets
1/2 cup caramelized walnuts
12 ounces of baby spring mix
4 ounces of goat cheese
Freshly ground pepper to taste
PREPARATION
Preheat the oven to 425°F. Scrub beets thoroughly and cut stems. Wrap each beet with aluminum foil and place on baking sheet. Roast for 60 minutes. Allow beets to cool until touchable and then peel. Place spring mix in a large serving bowl. Add beets, walnuts and goat cheese. Gently toss with vinaigrette.
INGREDIENTS FOR VINAIGRETTE
1/3 cup extra virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoons maple syrup
2 teaspoons Dijon mustard
Salt and pepper to taste
