BEETROOT + GOAT CHEESE SALAD

BEETROOT: This root veggie may be little, but she’s fierce. With one of the most impressive hues in the plant family, this scarlet lover reduces inflammation, lowers blood pressure and detoxifies.  Loaded with antioxidants and powerful phytonutrients called betalain, the little veg fights off free radicals, improves brain power and boosts energy. 


BEETROOT + GOAT CHEESE SALAD

INGREDIENTS

6 medium beets

1/2 cup caramelized walnuts

12 ounces of baby spring mix

4 ounces of goat cheese

Freshly ground pepper to taste

PREPARATION

Preheat the oven to 425°F. Scrub beets thoroughly and cut stems. Wrap each beet with aluminum foil and place on baking sheet. Roast for 60 minutes. Allow beets to cool until touchable and then peel. Place spring mix in a large serving bowl. Add beets, walnuts and goat cheese. Gently toss with vinaigrette.

INGREDIENTS FOR VINAIGRETTE

1/3 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 tablespoons maple syrup

2 teaspoons Dijon mustard

Salt and pepper to taste
