CUCUMBER + TOMATO SALAD
CUCUMBER: There’s a reason this common, nutrient-packed, vine plant steals the show at the spa: it promotes hydration, reduces swelling and aids in weight loss. On top of that, it’s a great snack (one cup = 16 calories). Try them on your eyes in the morning, your salad in the afternoon and your water (or cocktail) in the evening.
CUCUMBER & TOMATO SALAD

INGREDIENTS
16 ounces of cherry tomatoes, sliced in half
1 large seedless cucumber, peeled and quartered
Basil sprigs, for serving
Himalayan sea salt
Freshly ground pepper
INGREDIENTS FOR VINAIGRETTE
6 tablespoons of extra virgin olive oil
3 tablespoons of sherry vinegar
1 tablespoon minced shallot
Salt and Pepper
PREPARATION
Combine cherry tomatoes and cucumber in a serving bowl. In separate bowl combine sherry vinegar and shallot. Whisk. Slowly pour olive oil in mixture, while continuing to whisk. Gently pour sherry vinaigrette over tomatoes and cucumbers. Toss and top with freshly ground Himalayan sea salt and basil sprigs.
Bonus: The sherry vinaigrette is a perfect compliment to salads and raw veggies.
