GREEN BEAN SALAD

GREEN BEAN SALAD
INGREDIENTS
2 pounds of fresh green beans, trimmed
2 cans of organic dark red kidney beans, rinsed
2 cans of large black olives, drained, reserve juice
VINAIGRETTE INGREDIENTS
1/3 cup of extra virgin olive oil
2 tablespoons of balsamic vinaigrette
2 tablespoons of reserved olive juice
Salt & freshly cracked pepper
PREPARATION
Bring 4 quarts of salted water to a boil. Add green beans and cook 4-6 minutes. Drain. Transfer beans into an ice bath until cool. Drain beans and pat dry with toweling. In a large serving dish, combine green beans, kidney beans and black olives.
VINAIGRETTE PREPARATION
In a small bowl, whisk extra-virgin olive oil, balsamic vinegar, salt, and ground pepper until thickened and combined.
Pour vinaigrette over bean mixture. Gently toss.
