SWEET & SAVORY SWEET POTATOES + QUINOA
SWEET POTATO: Ranked as a superfood, this nutrient dense root veg is a great source of fiber, calcium and contains a plethora of vitamins including B, C & D. But the true superstar is the concentrated carotenoid content. That means lots of Vitamin A which protects us from free radicals – those pesky molecules that trigger inflammation, chronic illness and the signs of aging.
SWEET & SAVORY SWEET POTATOES + QUINOA

INGREDIENTS
2 large sweet potatoes, peeled and cubed
2 tablespoons extra virgin olive oil, plus more for serving
1/2 tablespoon brown sugar
1/4 teaspoon kosher salt
1/4 teaspoon chili powder
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
1 cup of quinoa, cooked
¼ cup goat cheese, crumbled
¼ cup slivered almonds, toasted
3 ounces of arugula
1 lemon, juiced
PREPARATION
Preheat the oven to 425°F and line a baking sheet with parchment paper. Place sweet potatoes in a large bowl and toss with brown sugar, salt, chili powder, paprika, cayenne pepper, black pepper and olive oil. Coat evenly. Spread potatoes in a single layer on a lined baking sheet. Roast for 15 minutes. Stir and roast for an additional 20 minutes.
Cook the quinoa according to package directions.
Spoon quinoa onto plate and layer arugula, goat cheese and roasted potatoes. Sprinkle with toasted almonds and drizzle with olive oil. Add a dash of lemon juice. Enjoy!
