COLLARD GREEN HUMMUS WRAPS
Collard greens are a fabulous substitute for bread & make an easy fold when soften.
TO SOFTEN COLLARD GREENS:

Collard Greens
Kosher Salt as needed
PREPARATION
Boil a pot of salt water. Prepare a large bowl of salted ice water and set aside. Trim the stem of the collard green the base of the leaf. Place collard green facedown and shave the thick middle stem using a peeler or paring knife. Drop greens into boiling salt water. Allow to boil for 30 seconds. Transfer greens to iced salt water. Soak for 20 minutes. Remove and pat dry. Store in refrigerator for up to one week.
HUMMUS WRAPS FOR 4
INGREDIENTS
4 collard greens
1 cup cilantro-jalapeño hummus
1 cup cucumber, peeled & julienned
1 cup red cabbage, thinly sliced
2 carrots, peeled & julienned
2 avocados, sliced
Mixed baby greens
PREPARATION
Spread hummus from mid-section to top of each leaf. Add veggies. Wrap leaves burrito-style. Cut each wrap in half.
